Stupid Good Sizzlin' Steak Tacos n' Poppin Pink Palomas

The Recipe: Let us paint you a picture. It’s early spring, barely 60 degrees but you live in Seattle, so any warmth is welcome. You and your boo are hungry, bored, and in the mood.... for steak. What food could match this sunny day Energy? What VIBE are you channeling? Tequila sounds good. You recently learned it’s a stimulant, so you won’t get too tired day drinking. What goes good with that sweet agave tincture ? You two settle on palomas and steak tacos. The perfect combination of red meat and citrus to really drive that spring spirit home. The game plan? Get drunk and eat tacos.


The pink paloma goods:

-Jose Cuervo silver -Grapefruit juice (the real good pure juice shiz from the organic section) -Grapefruit soda (jarritos is ideal, squirt also works if you go to Fred Meyers and they don’t have the good good) -Limes -Ice -Two pretty cups

Steps 1,2,3,4.. and so on: Pour two shots (actually measure them!) into the pretty cup with two big ice cubes. Then, fill the cup 2/3rds of the way with that tart grapefruit juice. Top her off with your soda and half a lime. Yeah, that’s a lot of lime, but believe me... delicious. You can be extra boujee and salt the rim of you like, but taking the time to give extra energy to the rim isn’t always worth it, ya know? Now drink. Indulge. Sit and talk. Laugh. Have some chips and salsa. Put on the album It’s Alive by La Luz. Dance in the kitchen. Make fun of each other. Ponder getting day drunk more. Have your boo remind you that’s not a good idea. Be proud of this drink you have created. Now-- time for tacos. Whatcha need: -Big ol steak -Half an onion -Handful of cilantro -White corn tortillas -Limes -Paprika -Chili powder -Garlic Powder -Cumin -Salt and Pepper -Salsa of choosing (no need to make your own... you’re kinda drunk now remember? Don’t be a show off). Step 1: prepare big ol' steak, turn on your stove with the cast iron so it gets all warm and toasty while you prep. Remember your bottle of tequila? She comes in handy now. Put your steak inside a ziplock and beat it with the side of the bottle. Tenderize the eff out of her. Remember, beating your meat is ALWAYS step one to a good night. After you beat it real good, rub all of the spices onto the steak. Really get it in there. Place the steak on the cast iron and cook for 3 mins per side to get extra rare and juicy meat. You can cook for 4 mins per side if you’re a wimp ass. After she’s done cooking, let her sit for 10 mins. Step 2: prepare the rest While big ol steak is resting for 10 mins, make another Paloma. Very important. One of you can make the drinks while the other cuts up half an onion and a bunch of cilantro and two limes. Also, if you don’t already have salsa out on the table (hello, you should have been eating chips and salsa this whole time), get that out now too.  Step 3: cut the steak This is very important. While one of you starts warming the tortillas up, the other needs to cut that big ol steak up into bite sized pieces. You can go as big or as small as you want. Remember, size sometimes does matter, especially when fitting them into a tortilla. Make sure they are small enough to bite into a taco comfortably, but big enough to keep the integrity of that delicious meat. Go with your gut. Step 4: assemble After burning the first few tortillas, you’ll find a good groove for how warm they need to be. Place the steak on the warm tortillas, then top off with the onions, cilantro, lime, and salsa. Step 5: eat (and also have a single Modelo) Sit down after your hard labor of love. Cheers. Smile.
